Ingredients

  • Mushrooms (400g, sliced) – Use a mix of button, cremini, or wild mushrooms for the best flavor.
  • Onion (1 large, finely chopped) – Adds natural sweetness and depth.
  • Garlic (2 cloves, minced) – Enhances the earthy taste of mushrooms.
  • Vegetable or Chicken Stock (750ml / 3 cups) – Forms the base of the soup.
  • Double Cream (150ml / ½ cup) – Adds a rich, velvety texture.

Optional Additions

  • Thyme or Parsley (for garnish) – Adds freshness.
  • Croutons or Toasted Bread – For extra crunch.
  • Grated Parmesan (for serving) – A cheesy touch.

Instructions

Step 1: Sauté the onions and garlic

Heat a little oil in a large pot over medium heat. Add the chopped onion and cook for 5 minutes until softened. Stir in the minced garlic and cook for another 1-2 minutes.

Step 2: Cook the mushrooms

Add the sliced mushrooms to the pot and cook for 8-10 minutes, stirring occasionally, until they release their juices and turn golden brown.

Step 3: Add the stock

Pour in the vegetable or chicken stock and bring to a simmer. Let it cook for 10 minutes, allowing the flavors to blend.

Step 4: Blend the soup

Use an immersion blender to puree the soup until smooth. If using a regular blender, blend in batches and return the soup to the pot.

Step 5: Stir in the cream

Reduce the heat to low and stir in the double cream. Let it warm through for 2 minutes, but avoid boiling. Adjust seasoning with salt and pepper.

Step 6: Serve

Ladle the soup into bowls and garnish with fresh parsley or thyme. Serve hot with crusty bread.
