These cookies combine the nutty flavor of oats with a blend of natural sweeteners and spices. Inspired by Jamie Oliver’s straightforward cooking style, this recipe leverages the air fryer to produce a delightful cookie with minimal fuss and maximum flavor.
Ingredients
- Old-fashioned rolled oats (100g / 1 cup) – Provides texture and a hearty base.
- Whole wheat flour (100g / 1 cup) – Helps bind the cookies together.
- Baking powder (½ teaspoon) – For a slight rise.
- Salt (¼ teaspoon) – Balances the sweetness.
- Ground cinnamon (½ teaspoon) – Adds warmth and spice.
- Unsalted butter (100g, melted) – Contributes to a rich flavor and tender crumb.
- Brown sugar (100g / ½ cup) – Natural sweetness and moisture.
- Egg (1 large) – Binds the ingredients.
- Vanilla extract (1 teaspoon) – Enhances the overall flavor.
- Optional: Raisins (50g / ⅓ cup) – For bursts of sweetness.
- Optional: Chopped walnuts (50g / ⅓ cup) – Adds crunch and a nutty flavor.
Instructions
- Preheat the Air Fryer: Preheat your air fryer to 160°C (320°F) for about 5 minutes.
- Mix Dry Ingredients: In a bowl, whisk together the rolled oats, whole wheat flour, baking powder, salt, and ground cinnamon.
- Combine Wet Ingredients: In a separate bowl, beat the egg with the melted butter, brown sugar, and vanilla extract until smooth.
- Form the Dough: Gradually mix the dry ingredients into the wet mixture until just combined. Fold in raisins and chopped walnuts if using. Let the dough rest for 5 minutes.
- Shape the Cookies: Scoop tablespoon-sized portions of dough and form them into balls. Flatten each ball slightly with your fingers to form cookie shapes.
- Prepare for Air Frying: Place the cookies on a piece of parchment paper cut to fit your air fryer basket, leaving space between each cookie.
- Air Fry the Cookies: Cook in the preheated air fryer at 160°C (320°F) for 8-10 minutes, or until the edges are golden and the cookies have set.
- Cool and Serve: Remove the cookies carefully from the air fryer and let them cool on a rack. Enjoy them warm or at room temperature.
