Ingredients

For the Soup

  • Brussels Sprouts (300g, trimmed and halved) – The star ingredient, is slightly sweet and nutty.
  • Olive Oil (2 tbsp) – For sautéing and adding richness.
  • Onion (1, finely chopped) – Adds a base of sweetness.
  • Garlic (2 cloves, minced) – Enhances flavor.
  • Potato (1 medium, peeled and diced, optional) – Adds creaminess.
  • Vegetable or Chicken Stock (1 liter / 4 cups) – Forms the soup base.
  • Single or Double Cream (150ml / ½ cup, optional) – Adds smoothness.
  • Salt and Black Pepper (to taste) – Enhances flavors.
  • Nutmeg (½ tsp, optional) – Adds warmth and depth.

Optional Additions

  • Parmesan Cheese (grated, for garnish) – Adds umami richness.
  • Croutons – For extra crunch.
  • Crispy Bacon Bits – A savory topping.
  • Lemon Zest (½ tsp) – Adds brightness.

Instructions

Step 1: Sauté the aromatics

Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes until softened.

Step 2: Cook the Brussels sprouts

Add the halved Brussels sprouts and diced potato (if using). Stir and cook for 5 minutes until slightly tender.

Step 3: Add the stock

Pour in the vegetable or chicken stock and bring to a gentle boil. Lower the heat and simmer for 15 minutes, until the Brussels sprouts and potatoes are completely soft.

Step 4: Blend the soup

Use an immersion blender to puree the soup until smooth. If using a regular blender, blend in batches and return the soup to the pot.

Step 5: Add cream and seasoning

Stir in the cream (if using) and season with salt, black pepper, and a pinch of nutmeg. Simmer for 2 more minutes to warm through.

Step 6: Serve

Ladle the soup into bowls and garnish with grated Parmesan, croutons, or crispy bacon bits if desired. Serve warm.
