Jamie Oliver’s Brussels Sprout Soup is a velvety, blended soup made from fresh Brussels sprouts, onions, garlic, and stock. - Single or Double Cream (150ml / ½ cup, optional) – Adds smoothness.
- Salt and Black Pepper (to taste) – Enhances flavors.
- Nutmeg (½ tsp, optional) – Adds warmth and depth.

Instructions
Step 1: Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes until softened.
Step 2: Cook the Brussels sprouts
Add the halved Brussels sprouts and diced potato (if using). Stir and cook for 5 minutes until slightly tender.
Step 3: Add the stock
Pour in the vegetable or chicken stock and bring to a gentle boil. Lower the heat and simmer for 15 minutes, until the Brussels sprouts and potatoes are completely soft.
Step 4: Blend the soup
Use an immersion blender to puree the soup until smooth. If using a regular blender, blend in batches and return the soup to the pot.
Step 5: Add cream and seasoning
Stir in the cream (if using) and season with salt, black pepper, and a pinch of nutmeg. Simmer for 2 more minutes to warm through.
Step 6: Serve
Ladle the soup into bowls and garnish with grated Parmesan, croutons, or crispy bacon bits if desired. Serve warm.
