- 1 sheet puff pastry – ready-rolled, for a crisp, golden crust.
- 2 large eggs – to bind the filling and brush the pastry.
- 1 tablespoon olive oil – for sautéing the spinach.
Instructions
- Preheat the oven: Preheat your oven to 200°C (400°F) to prepare for baking the pie.
- Wilt the spinach: In a large frying pan, heat the olive oil over medium heat. Add the fresh spinach and cook for a few minutes until wilted. Drain any excess liquid and set aside to cool.
- Prepare the filling: In a mixing bowl, combine the wilted spinach, crumbled feta cheese, and one egg. Stir until well mixed. Season with salt and pepper to taste.
- Roll out the puff pastry: If needed, roll the puff pastry sheet out slightly to fit your baking dish. Place the pastry in the dish, leaving some overhang on the edges.
- Assemble the pie: Spoon the spinach and feta mixture into the puff pastry shell, spreading it evenly. Fold the excess pastry over the filling to partially cover it.
- Brush with egg: Beat the remaining egg and brush it over the top of the pastry for a golden finish.
- Bake the pie: Place the pie in the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and crispy.
