Instructions
Step 1: Prepare the Batter
- In a mixing bowl, whisk the eggs and milk together.
- Gradually sift in the flour, whisking continuously to prevent lumps.
- Stir in the melted butter, salt, black pepper, and chopped herbs.
- If using, fold in the grated cheese for extra flavor.
Tip: Let the batter rest for 10-15 minutes to improve the texture.
Step 2: Cook the Pancakes
- Heat a non-stick frying pan over medium heat and lightly grease with butter or olive oil.
- Pour a small ladleful (about ¼ cup) of batter into the pan.
- Swirl the pan quickly to spread the batter evenly into a thin layer.
- Cook for 1-2 minutes, until the edges lift slightly and the bottom is golden brown.
